Ingredients

  • 1 pound ground beef
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup (plus more for topping)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups mashed potatoes
  • 2 tablespoons butter, softened
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with cupcake liners or grease the cups.
  2. In a large mixing bowl, combine the ground beef, egg, breadcrumbs, chopped onion, minced garlic, ketchup, Worcestershire sauce, salt, and black pepper. Mix until well combined.
  3. Evenly distribute the meat mixture into the prepared muffin tin, filling each cup about 2/3 full.
  4. Bake in the preheated oven for 25-30 minutes or until the meatloaf cupcakes are cooked through and reach an internal temperature of 160°F (70°C).
  5. While the meatloaf cupcakes are baking, prepare the mashed potato frosting. In a separate bowl, combine the mashed potatoes, softened butter, and milk. Mix until smooth and creamy. Adjust seasoning if needed.
  6. Once the meatloaf cupcakes are done, remove them from the oven and let them cool slightly.
  7. Using a piping bag or a spatula, top each meatloaf cupcake with the mashed potato frosting, creating a swirl or peak.
  8. Finish by drizzling a little ketchup on top of each 'cupcake' for decoration.
  9. Serve warm and enjoy your playful meatloaf cupcakes!
