April Fools Meatloaf Cupcakes

Ingredients
- 1 pound ground beef
- 1 large egg
- 1/2 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup ketchup (plus more for topping)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups mashed potatoes
- 2 tablespoons butter, softened
- 1/4 cup milk
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with cupcake liners or grease the cups.
- In a large mixing bowl, combine the ground beef, egg, breadcrumbs, chopped onion, minced garlic, ketchup, Worcestershire sauce, salt, and black pepper. Mix until well combined.
- Evenly distribute the meat mixture into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 25-30 minutes or until the meatloaf cupcakes are cooked through and reach an internal temperature of 160°F (70°C).
- While the meatloaf cupcakes are baking, prepare the mashed potato frosting. In a separate bowl, combine the mashed potatoes, softened butter, and milk. Mix until smooth and creamy. Adjust seasoning if needed.
- Once the meatloaf cupcakes are done, remove them from the oven and let them cool slightly.
- Using a piping bag or a spatula, top each meatloaf cupcake with the mashed potato frosting, creating a swirl or peak.
- Finish by drizzling a little ketchup on top of each 'cupcake' for decoration.
- Serve warm and enjoy your playful meatloaf cupcakes!
