Asian Noodle Salad

Ingredients
- 8 ounces of rice noodles
- 1 cup of shredded carrots
- 1 cup of sliced bell peppers
- 1/2 cup of chopped green onions
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of sesame oil
- 1 tablespoon of honey
- 2 tablespoons of sesame seeds for garnish
- 1/4 cup of chopped cilantro for garnish
Instructions
- Cook the rice noodles according to the package instructions, then drain and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooked noodles, shredded carrots, sliced bell peppers, and chopped green onions.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and honey until well combined to make the dressing.
- Pour the dressing over the noodle salad and toss until all ingredients are evenly coated.
- Sprinkle with sesame seeds and cilantro, tossing gently to combine.
- Serve chilled or at room temperature, garnished with extra green onions or cilantro if desired.
