Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Grill the chicken for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.
  4. While the chicken is grilling, prepare the salad base. In a large bowl, combine the mixed greens, cherry tomatoes, and diced cucumber.
  5. In a small bowl, whisk together the olive oil, lemon juice, and a pinch of salt and pepper to create the dressing.
  6. Slice the grilled chicken and layer it on top of the mixed greens. Add the sliced avocado and drizzle with the lemon vinaigrette.
  7. Toss gently to combine and serve immediately.
