Avocado Power Salad with Grilled Chicken

Ingredients
- 5 cups mixed greens
- 2 boneless, skinless chicken breasts
- 1 ripe avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- to taste salt
- to taste black pepper
Instructions
- Preheat the grill or grill pan over medium-high heat.
- Season the chicken breasts with salt and black pepper on both sides.
- Grill the chicken for 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.
- While the chicken is grilling, prepare the salad base. In a large bowl, combine the mixed greens, cherry tomatoes, and diced cucumber.
- In a small bowl, whisk together the olive oil, lemon juice, and a pinch of salt and pepper to create the dressing.
- Slice the grilled chicken and layer it on top of the mixed greens. Add the sliced avocado and drizzle with the lemon vinaigrette.
- Toss gently to combine and serve immediately.
