Avocado Toast with Feta

Ingredients
- 2 slices of whole grain bread
- 1 ripe avocado
- 1 tablespoon of lemon juice
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of crumbled feta cheese
- 1/4 teaspoon of red pepper flakes (for garnish)
- 1 sprig of fresh parsley or cilantro for garnish
Instructions
- Toast the slices of whole grain bread in a toaster until golden brown and crispy.
- While the bread is toasting, cut the ripe avocados in half, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with a fork until creamy and smooth, leaving some chunks for texture.
- Add the lemon juice, salt, and black pepper to the mashed avocado, mixing well to combine.
- Spread the avocado mixture evenly over each slice of toasted bread.
- Crumble the feta cheese generously over the avocado layer on each slice.
- Sprinkle the red pepper flakes on top for extra flavor, and garnish with fresh parsley or cilantro if desired.
