Baked Feta Cheese Pasta

Ingredients
- 2 pints of cherry tomatoes
- 1 block of feta cheese (approximately 8 oz)
- 1/4 cup of olive oil
- 4 garlic cloves, minced
- 1 teaspoon of dried oregano
- 1/2 teaspoon of red pepper flakes
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 12 oz of pasta (penne or fusilli)
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large baking dish, combine the cherry tomatoes, minced garlic, dried oregano, red pepper flakes, salt, and black pepper. Drizzle with olive oil and toss to coat evenly.
- Place the block of feta cheese in the center of the tomato mixture. Drizzle a little more olive oil over the feta.
- Bake in the preheated oven for 25-30 minutes until the tomatoes are bursting and the feta is soft and golden.
- While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.
- Once the feta and tomatoes are done, remove the baking dish from the oven. Using a fork, mash the feta and mix it with the tomatoes to create a creamy sauce.
- Add the cooked pasta to the baking dish and toss everything together until well combined.
- Serve hot, garnished with fresh basil leaves.
