Ingredients

  • 2 pints of cherry tomatoes
  • 1 block of feta cheese (approximately 8 oz)
  • 1/4 cup of olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of red pepper flakes
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 12 oz of pasta (penne or fusilli)
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, combine the cherry tomatoes, minced garlic, dried oregano, red pepper flakes, salt, and black pepper. Drizzle with olive oil and toss to coat evenly.
  3. Place the block of feta cheese in the center of the tomato mixture. Drizzle a little more olive oil over the feta.
  4. Bake in the preheated oven for 25-30 minutes until the tomatoes are bursting and the feta is soft and golden.
  5. While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside.
  6. Once the feta and tomatoes are done, remove the baking dish from the oven. Using a fork, mash the feta and mix it with the tomatoes to create a creamy sauce.
  7. Add the cooked pasta to the baking dish and toss everything together until well combined.
  8. Serve hot, garnished with fresh basil leaves.
