Berry Dutch Baby

Ingredients
- 3 large eggs
- 1 cup of milk
- 1 teaspoon of vanilla extract
- 1 cup of all-purpose flour
- 1 tablespoon of sugar
- 1/2 teaspoon of salt
- 2 tablespoons of unsalted butter
- 1 cup of mixed berries (blueberries, raspberries, and strawberries)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, whisk together 3 large eggs until frothy.
- Add 1 cup of milk and 1 teaspoon of vanilla extract to the eggs and whisk until well combined.
- In another bowl, combine 1 cup of all-purpose flour, 1 tablespoon of sugar, and 1/2 teaspoon of salt. Mix well.
- Gradually add the flour mixture to the egg mixture, whisking until smooth and lump-free.
- Place a 10-inch cast-iron skillet in the oven with 2 tablespoons of unsalted butter and let it heat for about 5 minutes until the butter is melted and bubbling.
- Carefully remove the skillet from the oven and pour the batter into the skillet over the melted butter.
- Sprinkle 1 cup of mixed berries (such as blueberries, raspberries, and strawberries) evenly over the batter.
- Return the skillet to the oven and bake for 20-25 minutes, or until the edges are puffed and golden brown.
- Once baked, remove from the oven and let it cool slightly before slicing.
- Dust with powdered sugar and serve warm, garnished with additional berries if desired.
