  • 3 large eggs

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, whisk together 3 large eggs until frothy.
  3. Add 1 cup of milk and 1 teaspoon of vanilla extract to the eggs and whisk until well combined.
  4. In another bowl, combine 1 cup of all-purpose flour, 1 tablespoon of sugar, and 1/2 teaspoon of salt. Mix well.
  5. Gradually add the flour mixture to the egg mixture, whisking until smooth and lump-free.
  6. Place a 10-inch cast-iron skillet in the oven with 2 tablespoons of unsalted butter and let it heat for about 5 minutes until the butter is melted and bubbling.
  7. Carefully remove the skillet from the oven and pour the batter into the skillet over the melted butter.
  8. Sprinkle 1 cup of mixed berries (such as blueberries, raspberries, and strawberries) evenly over the batter.
  9. Return the skillet to the oven and bake for 20-25 minutes, or until the edges are puffed and golden brown.
  10. Once baked, remove from the oven and let it cool slightly before slicing.
  11. Dust with powdered sugar and serve warm, garnished with additional berries if desired.
