Ingredients
- 2 blueberry pancakes
- 2 large eggs
- 2 sausage links
- 1 tablespoon butter
- to taste maple syrup
- a pinch of salt
- to taste pepper
Instructions
- Start by preparing the blueberry pancakes according to your favorite recipe or using a mix. Heat a non-stick skillet over medium heat and melt half a tablespoon of butter.
- Pour the pancake batter into the skillet, forming two pancakes. Cook for about 2-3 minutes on each side or until golden brown and cooked through.
- While the pancakes are cooking, in another skillet, heat the remaining butter over medium heat. Add the sausage links and cook for about 4-5 minutes, turning occasionally until browned and cooked through.
- In the same skillet as the sausages or a separate one, crack the two eggs. Season with a pinch of salt and pepper. Cook to your preference: sunny-side up, over-easy, or scrambled.
- Once everything is cooked, stack the blueberry pancakes on a plate, top with the cooked eggs, and place the sausage links on the side.
- Drizzle with maple syrup to taste and serve immediately.
- Customize your breakfast by adding fresh fruits like sliced bananas, strawberries, or a sprinkle of chopped nuts like walnuts or pecans on top of the pancakes. For a heartier option, replace the sausage with crispy bacon or add a vegetable-packed omelet.
