Caesar Salad with Homemade Dressing

Ingredients
- 1 head of romaine lettuce, chopped
- 1 cup of croutons
- 1/2 cup of mayonnaise
- 2 tablespoons of Dijon mustard
- 2 tablespoons of red wine vinegar
- 2 cloves of garlic, minced
- 1/4 teaspoon of black pepper
- 1/4 cup of olive oil
- 1/4 cup of grated Parmesan cheese, plus extra for topping
Instructions
- In a large bowl, combine 1 head of romaine lettuce, chopped into bite-sized pieces, with 1 cup of croutons.
- In a separate small bowl, whisk together 1/2 cup of mayonnaise, 2 tablespoons of Dijon mustard, 2 tablespoons of red wine vinegar, 2 cloves of garlic minced, and 1/4 teaspoon of black pepper until smooth.
- Slowly drizzle in 1/4 cup of olive oil while whisking continuously until the dressing is well blended.
- Add 1/4 cup of grated Parmesan cheese to the dressing and mix well.
- Pour the dressing over the lettuce and croutons, tossing until everything is evenly coated.
- Top the salad with additional Parmesan cheese and black pepper before serving.
