Caprese Sandwich with Pesto

Ingredients
- 2 ciabatta rolls
- 4 ounces fresh mozzarella, sliced
- 1 large ripe tomato, sliced
- 1/4 cup fresh basil leaves
- 2 tablespoons pesto sauce
- 1 tablespoon balsamic glaze (optional)
- 1 teaspoon olive oil (for grilling)
- 1 pinch of salt
- 1 pinch of black pepper
Instructions
- Slice the ciabatta rolls in half horizontally.
- Spread 1 tablespoon of pesto sauce on the bottom half of each ciabatta roll.
- Layer the sliced fresh mozzarella evenly over the pesto.
- Add the sliced ripe tomato on top of the mozzarella, followed by fresh basil leaves.
- Drizzle with balsamic glaze if desired, and season with a pinch of salt and black pepper.
- Top with the other half of the ciabatta roll.
- Heat a skillet over medium heat and add the olive oil.
- Place the sandwich in the skillet and grill for about 2-3 minutes on each side, or until the bread is golden brown and the cheese is slightly melted.
- Remove from the skillet, slice in half, and serve immediately.
