Ingredients

  • 2 ciabatta rolls
  • 4 ounces fresh mozzarella, sliced
  • 1 large ripe tomato, sliced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons pesto sauce
  • 1 tablespoon balsamic glaze (optional)
  • 1 teaspoon olive oil (for grilling)
  • 1 pinch of salt
  • 1 pinch of black pepper

Instructions

  1. Slice the ciabatta rolls in half horizontally.
  2. Spread 1 tablespoon of pesto sauce on the bottom half of each ciabatta roll.
  3. Layer the sliced fresh mozzarella evenly over the pesto.
  4. Add the sliced ripe tomato on top of the mozzarella, followed by fresh basil leaves.
  5. Drizzle with balsamic glaze if desired, and season with a pinch of salt and black pepper.
  6. Top with the other half of the ciabatta roll.
  7. Heat a skillet over medium heat and add the olive oil.
  8. Place the sandwich in the skillet and grill for about 2-3 minutes on each side, or until the bread is golden brown and the cheese is slightly melted.
  9. Remove from the skillet, slice in half, and serve immediately.
