Cheese Ravioli with Homemade Meatballs

Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped parsley
- 1 egg
- 2 cloves minced garlic
- 1 each salt
- 1 each black pepper
- 1 package pre-made cheese ravioli
- 2 tablespoons olive oil
- 1 each diced onion
- 1 can (28 ounces) crushed tomatoes
- 1 tablespoon tomato paste
- 1 each dried oregano
- freshly chopped basil, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine 1 pound of ground beef, 1/2 cup of breadcrumbs, 1/4 cup of grated Parmesan cheese, 1/4 cup of finely chopped parsley, 1 egg, 2 cloves of minced garlic, 1 each of salt, and 1 each of black pepper.
- Mix the meatball ingredients until well combined. Shape the mixture into 1-inch meatballs.
- Place the meatballs on a baking sheet lined with parchment paper and bake for 15-20 minutes or until they are cooked through and browned.
- While the meatballs are baking, bring a large pot of salted water to a boil. Add the pre-made cheese ravioli and cook according to the package instructions, usually about 3-4 minutes. Once cooked, drain the ravioli and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 each of diced onion and sauté until translucent, about 5 minutes.
- Stir in 1 can (28 ounces) of crushed tomatoes, 1 tablespoon of tomato paste, and 1 each of dried oregano. Let the sauce simmer for 10 minutes to thicken and develop flavors.
- Add the baked meatballs to the sauce and gently stir to coat them. Let them simmer together for 5 minutes.
- Serve the meatballs and sauce over the cooked ravioli. Garnish with freshly chopped basil and additional grated Parmesan cheese.
