- 4 cups of water
- 1 teaspoon of salt
- 1 cup of cornmeal
- 1 cup of grated Parmesan cheese
- 2 tablespoons of butter
- 1 teaspoon of black pepper
- 2 cups of marinara sauce
- 1 tablespoon of Italian seasoning
- 1 cup of shredded mozzarella cheese
- fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt to the boiling water.
- Gradually whisk in 1 cup of cornmeal, stirring continuously to prevent lumps from forming.
- Reduce the heat to low and cook the polenta for about 20-25 minutes, stirring frequently, until it thickens and pulls away from the sides of the pan.
- Remove the polenta from heat and stir in 1 cup of grated Parmesan cheese, 2 tablespoons of butter, and 1 teaspoon of black pepper until well combined.
- Pour the polenta into a greased 9x13 inch baking dish and spread it evenly.
- In a separate bowl, mix 2 cups of marinara sauce with 1 tablespoon of Italian seasoning.
- Spread the marinara mixture evenly over the layer of polenta in the baking dish.
- Top with 1 cup of shredded mozzarella cheese and a sprinkle of fresh parsley for garnish.
- Bake the polenta in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, let it cool for a few minutes, then slice and serve.
