Instructions

  1. In a medium-sized bowl, combine 1 can of rinsed and drained chickpeas, 1 cup of diced cucumber, 1 cup of halved cherry tomatoes, 1/2 cup of diced red onion, and 1/2 cup of crumbled feta cheese.
  2. In a small bowl, whisk together 1/4 cup of olive oil, the juice of 1 lemon, 1 teaspoon of dried oregano, 1 teaspoon of garlic powder, and salt and pepper to taste.
  3. Pour the dressing over the chickpea mixture and toss gently to combine, ensuring all ingredients are evenly coated.
  4. Let the mixture marinate for about 15 minutes at room temperature for the flavors to meld.
  5. Serve the chickpea and feta mixture over a bed of baby spinach or mixed greens, and top with 1/4 cup of sliced Kalamata olives and 1/4 cup of roasted red peppers, if desired.
