Chickpea and Feta Mediterranean Bowl

Ingredients
- 1 can of chickpeas, rinsed and drained
- 1 cup of diced cucumber
- 1 cup of halved cherry tomatoes
- 1/2 cup of diced red onion
- 1/2 cup of crumbled feta cheese
- 1/4 cup of olive oil
- juice of 1 lemon
- 1 teaspoon of dried oregano
- 1 teaspoon of garlic powder
- salt to taste
- pepper to taste
- baby spinach or mixed greens for serving
- 1/4 cup of sliced Kalamata olives
- 1/4 cup of roasted red peppers, optional
Instructions
- In a medium-sized bowl, combine 1 can of rinsed and drained chickpeas, 1 cup of diced cucumber, 1 cup of halved cherry tomatoes, 1/2 cup of diced red onion, and 1/2 cup of crumbled feta cheese.
- In a small bowl, whisk together 1/4 cup of olive oil, the juice of 1 lemon, 1 teaspoon of dried oregano, 1 teaspoon of garlic powder, and salt and pepper to taste.
- Pour the dressing over the chickpea mixture and toss gently to combine, ensuring all ingredients are evenly coated.
- Let the mixture marinate for about 15 minutes at room temperature for the flavors to meld.
- Serve the chickpea and feta mixture over a bed of baby spinach or mixed greens, and top with 1/4 cup of sliced Kalamata olives and 1/4 cup of roasted red peppers, if desired.
