Chili Lime Ramen

Ingredients
- 4 packs of ramen noodles
- 6 cups of chicken or vegetable broth
- 1/4 cup of fresh lime juice
- 3 tablespoons of soy sauce
- 2 tablespoons of sriracha sauce
- 4 cloves of minced garlic
- 1 tablespoon of grated fresh ginger
- 1 large bell pepper, sliced
- 1 large carrot, julienned
- 1/2 cup of sliced green onions
- 1/4 cup of chopped fresh cilantro
- 4 lime wedges for serving
Instructions
- In a large pot, heat the chicken or vegetable broth over medium heat.
- Add the minced garlic, grated ginger, soy sauce, and sriracha sauce to the pot. Stir well and bring to a simmer.
- Add the sliced bell pepper and julienned carrot to the broth. Cook for about 5 minutes until the vegetables are tender.
- In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.
- Once the vegetables are tender, stir in the fresh lime juice and the cooked ramen noodles into the broth. Mix well to combine.
- Serve the Chili Lime Ramen hot, garnished with sliced green onions and chopped cilantro. Add lime wedges on the side for an extra zesty kick.
