Classic Eggs Over Easy with Sautéed Spinach

Ingredients
- 2 large eggs
- 2 cups fresh spinach, washed
- 1 tablespoon olive oil
- Salt to taste
- Freshly ground black pepper to taste
- 1 teaspoon butter
Instructions
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the fresh spinach to the skillet and sauté for 2-3 minutes until wilted. Season with salt and fresh black pepper. Remove from the skillet and set aside.
- In the same skillet, add the butter and allow it to melt.
- Crack the eggs gently into the skillet, being careful not to break the yolks.
- Cook the eggs for about 2-3 minutes until the whites are set but the yolks are still runny.
- Using a spatula, carefully flip the eggs and cook for an additional 30 seconds to 1 minute for over easy. Adjust the cooking time based on your preference (1-2 minutes for over medium).
- Remove the eggs from the skillet and serve immediately on a plate accompanied by the sautéed spinach.
