Ingredients

  • 2 large eggs
  • 2 cups fresh spinach, washed
  • 1 tablespoon olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 teaspoon butter

Instructions

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Add the fresh spinach to the skillet and sauté for 2-3 minutes until wilted. Season with salt and fresh black pepper. Remove from the skillet and set aside.
  3. In the same skillet, add the butter and allow it to melt.
  4. Crack the eggs gently into the skillet, being careful not to break the yolks.
  5. Cook the eggs for about 2-3 minutes until the whites are set but the yolks are still runny.
  6. Using a spatula, carefully flip the eggs and cook for an additional 30 seconds to 1 minute for over easy. Adjust the cooking time based on your preference (1-2 minutes for over medium).
  7. Remove the eggs from the skillet and serve immediately on a plate accompanied by the sautéed spinach.
