Classic Meatloaf with Herb-Infused Mashed Potatoes

Ingredients
- 1 pound ground beef
- 1 cup bread crumbs
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- 1/2 cup milk
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 pounds potatoes, peeled and cubed
- 4 tablespoons butter, softened
- 2 tablespoons fresh parsley, chopped
- 1/2 cup milk (for mashed potatoes)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine ground beef, bread crumbs, chopped onion, minced garlic, egg, milk, ketchup, Worcestershire sauce, salt, and black pepper. Mix until well combined.
- Transfer the meat mixture into a loaf pan and shape it into a loaf. Optionally, spread a thin layer of ketchup over the top.
- Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C).
- While the meatloaf is baking, prepare the mashed potatoes. In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add butter, fresh parsley, and milk. Mash until smooth and creamy. Season with salt and pepper to taste.
- Once the meatloaf is done, let it rest for 10 minutes before slicing.
- Serve slices of meatloaf with a generous portion of herb-infused mashed potatoes.
