  • 1 pound ground beef
  • 1 cup bread crumbs

  • 2 pounds potatoes, peeled and cubed
  • 4 tablespoons butter, softened
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup milk (for mashed potatoes)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, bread crumbs, chopped onion, minced garlic, egg, milk, ketchup, Worcestershire sauce, salt, and black pepper. Mix until well combined.
  3. Transfer the meat mixture into a loaf pan and shape it into a loaf. Optionally, spread a thin layer of ketchup over the top.
  4. Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C).
  5. While the meatloaf is baking, prepare the mashed potatoes. In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes.
  6. Drain the potatoes and return them to the pot. Add butter, fresh parsley, and milk. Mash until smooth and creamy. Season with salt and pepper to taste.
  7. Once the meatloaf is done, let it rest for 10 minutes before slicing.
  8. Serve slices of meatloaf with a generous portion of herb-infused mashed potatoes.
