  • 400 grams spaghetti (use high-quality pasta for best results)
  • 150 grams pancetta (can substitute with bacon)
  • 4 eggs (use large eggs)
  • 100 grams Parmesan cheese (freshly grated)

  • to taste salt (for pasta water)

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
  2. In a frying pan, cook the pancetta over medium heat until crispy.
  3. In a mixing bowl, whisk together the eggs and Parmesan cheese.
  4. Drain the pasta, reserving some of the pasta water.
  5. Add the hot pasta to the pancetta and remove from heat.
  6. Quickly mix in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
  7. Season with black pepper and serve immediately.
