Ingredients
- 400 grams spaghetti (use high-quality pasta for best results)
- 150 grams pancetta (can substitute with bacon)
- 4 eggs (use large eggs)
- 100 grams Parmesan cheese (freshly grated)
- to taste black pepper (freshly ground)
- to taste salt (for pasta water)
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
- In a frying pan, cook the pancetta over medium heat until crispy.
- In a mixing bowl, whisk together the eggs and Parmesan cheese.
- Drain the pasta, reserving some of the pasta water.
- Add the hot pasta to the pancetta and remove from heat.
- Quickly mix in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
- Season with black pepper and serve immediately.
