  • 400 grams spaghetti (dried)
  • 150 grams pancetta (cut into small cubes)
  • 4 eggs (large)
  • 100 grams Parmesan cheese (grated)

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
  2. In a frying pan, cook the pancetta over medium heat until crispy.
  3. In a mixing bowl, whisk together the eggs and Parmesan cheese.
  4. Drain the spaghetti and reserve some pasta water.
  5. Add the spaghetti to the pan with pancetta and remove from heat.
  6. Quickly mix in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
  7. Season with black pepper and salt to taste.
