Ingredients
- 400 grams spaghetti (dried)
- 150 grams pancetta (cut into small cubes)
- 4 eggs (large)
- 100 grams Parmesan cheese (grated)
- to taste black pepper (freshly ground)
- to taste salt
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
- In a frying pan, cook the pancetta over medium heat until crispy.
- In a mixing bowl, whisk together the eggs and Parmesan cheese.
- Drain the spaghetti and reserve some pasta water.
- Add the spaghetti to the pan with pancetta and remove from heat.
- Quickly mix in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
- Season with black pepper and salt to taste.
