Ingredients
- 400 grams spaghetti (use high-quality pasta for best results)
- 150 grams pancetta (can substitute with guanciale)
- 4 eggs (use fresh eggs)
- 100 grams Parmesan cheese (grated)
- to taste black pepper (freshly ground)
- to taste salt (for pasta water)
Instructions
- Bring a large pot of salted water to a boil.
- Cook the spaghetti according to package instructions until al dente.
- In a frying pan, cook the pancetta over medium heat until crispy.
- In a mixing bowl, whisk together eggs and Parmesan cheese.
- Drain the spaghetti and reserve some pasta water.
- Combine the spaghetti with the pancetta in the frying pan.
- Remove from heat and quickly mix in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
- Season with black pepper and serve immediately.
