Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the spaghetti according to package instructions until al dente.
  3. In a frying pan, cook the pancetta over medium heat until crispy.
  4. In a mixing bowl, whisk together eggs and Parmesan cheese.
  5. Drain the spaghetti and reserve some pasta water.
  6. Combine the spaghetti with the pancetta in the frying pan.
  7. Remove from heat and quickly mix in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
  8. Season with black pepper and serve immediately.
