Classic Sweet Potato Pie
Ingredients
- 2 cups mashed sweet potatoes
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 3/4 cup packed brown sugar
- 2 large eggs
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 unbaked pie crust
Instructions
- Preheat your oven to 350°F (175°C).
- Boil sweet potatoes in a pot of water until tender, about 25 minutes. Drain and let cool briefly.
- Peel the sweet potatoes and mash them in a large mixing bowl until smooth.
- Add brown sugar, cinnamon, nutmeg, and mix until combined.
- In a separate bowl, whisk together the eggs, evaporated milk, and vanilla extract.
- Combine the egg mixture with the sweet potato mixture until smooth.
- Pour the sweet potato filling into the unbaked pie crust, spreading it evenly.
- Bake in the preheated oven for 50 minutes, or until the filling is set and a knife inserted comes out clean.
- Let the pie cool on a wire rack before serving. Enjoy warm or chilled!
