Instructions

  1. Begin by washing the broccoli thoroughly under cold water. Cut the broccoli into small florets and set aside.
  2. Peel the cucumber and slice it into thin rounds. You can also cut the rounds in half for easier eating. Set aside.
  3. Peel the red onion and slice it thinly. If the flavor is too strong for you, you can soak the slices in cold water for 10 minutes and then drain them.
  4. In a large mixing bowl, combine the broccoli florets, cucumber slices, and red onion slices.
  5. In a separate small bowl, prepare the dressing by whisking together 2 tablespoons of olive oil, 1 tablespoon of apple cider vinegar, and 1 each of salt and pepper until well combined.
  6. Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
  7. Let the salad sit for about 10 minutes to allow the flavors to meld. Serve chilled or at room temperature.
