Instructions

  1. In a large mixing bowl, scoop the flesh of the ripe avocados and mash them gently with a fork, leaving some chunks for texture.
  2. Add the drained and rinsed black beans, halved cherry tomatoes, finely chopped red onion, and chopped cilantro to the bowl with the avocado.
  3. In a small bowl, whisk together the lime juice, extra virgin olive oil, salt, and black pepper until well combined.
  4. Pour the dressing over the salad mixture and gently toss until everything is well coated.
  5. Taste and adjust the seasoning if necessary, adding more lime juice, salt, or pepper as desired.
  6. Serve immediately, or refrigerate for up to 30 minutes to allow the flavors to meld.
