Creamy Avocado and Bean Salad

Ingredients
- 2 ripe avocados
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/4 medium red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large mixing bowl, scoop the flesh of the ripe avocados and mash them gently with a fork, leaving some chunks for texture.
- Add the drained and rinsed black beans, halved cherry tomatoes, finely chopped red onion, and chopped cilantro to the bowl with the avocado.
- In a small bowl, whisk together the lime juice, extra virgin olive oil, salt, and black pepper until well combined.
- Pour the dressing over the salad mixture and gently toss until everything is well coated.
- Taste and adjust the seasoning if necessary, adding more lime juice, salt, or pepper as desired.
- Serve immediately, or refrigerate for up to 30 minutes to allow the flavors to meld.
