Creamy Mediterranean Hummus

Ingredients
- 1 can (15 oz) canned chickpeas, drained and rinsed
- 1/4 cup tahini
- 3 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt, or to taste
- 2-4 tablespoons water (as needed)
- 1/2 teaspoon paprika (for garnish)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- In a food processor, combine the drained and rinsed chickpeas, tahini, lemon juice, minced garlic, olive oil, ground cumin, and salt.
- Blend the mixture until smooth and creamy. If the hummus is too thick, gradually add water, one tablespoon at a time, until you reach your desired consistency.
- Taste and adjust seasoning as needed, adding more salt or lemon juice if desired.
- Transfer the hummus to a serving bowl and smooth the top with a spatula.
- Drizzle a little extra virgin olive oil over the top and sprinkle with paprika and chopped parsley for garnish.
- Serve with fresh vegetables, gluten-free pita bread, or your favorite snacks.
