  • 1 can (15 oz) canned chickpeas, drained and rinsed

  • 3 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 2 tablespoons extra virgin olive oil

  • 1/2 teaspoon salt, or to taste
  • 2-4 tablespoons water (as needed)
  • 1/2 teaspoon paprika (for garnish)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a food processor, combine the drained and rinsed chickpeas, tahini, lemon juice, minced garlic, olive oil, ground cumin, and salt.
  2. Blend the mixture until smooth and creamy. If the hummus is too thick, gradually add water, one tablespoon at a time, until you reach your desired consistency.
  3. Taste and adjust seasoning as needed, adding more salt or lemon juice if desired.
  4. Transfer the hummus to a serving bowl and smooth the top with a spatula.
  5. Drizzle a little extra virgin olive oil over the top and sprinkle with paprika and chopped parsley for garnish.
  6. Serve with fresh vegetables, gluten-free pita bread, or your favorite snacks.
