Crispy Cilantro Lime Chicken

Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
Instructions
- In a large bowl, combine chopped cilantro, lime juice, olive oil, minced garlic, salt, black pepper, and paprika. Mix well to create a marinade.
- Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and let marinate in the refrigerator for at least 30 minutes for the best flavor.
- Preheat your air fryer to 375°F (190°C).
- In a shallow dish, combine panko breadcrumbs and grated Parmesan cheese. Mix until well combined.
- Remove the marinated chicken from the refrigerator. Dredge each chicken breast in the panko mixture, pressing gently to adhere the breadcrumbs to the chicken.
- Place the breaded chicken breasts in the air fryer basket in a single layer. Spray lightly with cooking spray to enhance crispiness.
- Air fry the chicken at 375°F (190°C) for 10 minutes. Flip the chicken and air fry for an additional 8-10 minutes, or until the internal temperature reaches 165°F (75°C) and the coating is golden brown.
- Once cooked, remove from the air fryer and let rest for a few minutes before serving.
