Instructions

  1. Start by washing all vegetables thoroughly under cold running water.
  2. Slice 2 medium cucumbers and 4 medium tomatoes into bite-sized pieces.
  3. Chop 1 small red onion into thin slices.
  4. In a large mixing bowl, combine the sliced cucumbers, tomatoes, and red onion.
  5. Add 1/4 cup of chopped fresh parsley and 1/4 cup of chopped fresh basil to the bowl for flavor.
  6. In a separate small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to create the dressing.
  7. Pour the dressing over the salad mixture and toss gently until all ingredients are evenly coated.
  8. Let the salad sit for about 10 minutes to allow the flavors to meld.
  9. Serve fresh, garnished with additional parsley or basil if desired.
