Cucumber Tomato Salad

Ingredients
- 2 medium cucumbers, sliced
- 4 medium tomatoes, sliced
- 1 small red onion, sliced
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh basil, chopped
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- fresh parsley or basil for garnish
Instructions
- Start by washing all vegetables thoroughly under cold running water.
- Slice 2 medium cucumbers and 4 medium tomatoes into bite-sized pieces.
- Chop 1 small red onion into thin slices.
- In a large mixing bowl, combine the sliced cucumbers, tomatoes, and red onion.
- Add 1/4 cup of chopped fresh parsley and 1/4 cup of chopped fresh basil to the bowl for flavor.
- In a separate small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to create the dressing.
- Pour the dressing over the salad mixture and toss gently until all ingredients are evenly coated.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Serve fresh, garnished with additional parsley or basil if desired.
