Cucumber Salad with Fresh Herbs

Ingredients
- 2 medium cucumbers, sliced
- 2 medium bell peppers, sliced
- 1 small red onion, sliced
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh basil, chopped
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper

Instructions
- Begin by preparing the vegetables. Slice 2 medium cucumbers into thin rounds and place them in a large mixing bowl.
- Next, substitute the tomatoes with 2 medium bell peppers, sliced into thin strips, and add them to the bowl with the cucumbers.
- Slice 1 small red onion into thin rings and add it to the bowl for a zesty flavor.
- Chop 1/4 cup of fresh parsley and 1/4 cup of fresh basil, then sprinkle these herbs over the vegetables in the bowl.
- In a separate small bowl, whisk together 1/4 cup of olive oil and 2 tablespoons of red wine vinegar until well combined.
- Pour the dressing over the vegetable mixture, ensuring everything is evenly coated.
- Add 1 teaspoon of salt and 1/2 teaspoon of black pepper to the salad, mixing gently to combine the flavors.
- Let the salad sit for at least 10 minutes to allow the flavors to meld together before serving.
