Instructions

  1. Begin by preparing the vegetables. Slice the 2 medium cucumbers into thin rounds and place them in a large mixing bowl.
  2. Next, slice the 4 medium tomatoes into wedges and add them to the bowl with the cucumbers.
  3. Slice the 1 small red onion into thin rings and add to the bowl. The onion will add a nice crunch and flavor to the salad.
  4. Chop the 1/4 cup of fresh parsley and 1/4 cup of fresh basil. Add both herbs to the mixing bowl for a burst of freshness.
  5. In a separate small bowl, whisk together 1/4 cup of olive oil and 2 tablespoons of red wine vinegar until well combined.
  6. Season the dressing with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Mix well.
  7. Cook the bacon until crispy, then let it cool. Once cooled, chop the bacon into small pieces and set aside.
