×
Ingredients
- 2 medium cucumbers, sliced
- 4 medium tomatoes, sliced
- 1 small red onion, sliced
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh basil, chopped
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 4 slices of bacon, cooked and chopped
- fresh parsley or basil for garnish
Instructions
- Begin by preparing the vegetables. Slice the 2 medium cucumbers into thin rounds and place them in a large mixing bowl.
- Next, slice the 4 medium tomatoes into wedges and add them to the bowl with the cucumbers.
- Slice the 1 small red onion into thin rings and add to the bowl. The onion will add a nice crunch and flavor to the salad.
- Chop the 1/4 cup of fresh parsley and 1/4 cup of fresh basil. Add both herbs to the mixing bowl for a burst of freshness.
- In a separate small bowl, whisk together 1/4 cup of olive oil and 2 tablespoons of red wine vinegar until well combined.
- Season the dressing with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Mix well.
- Cook the bacon until crispy, then let it cool. Once cooled, chop the bacon into small pieces and set aside.
- Pour the dressing over the salad mixture and toss gently to combine all the ingredients.
- Finally, sprinkle the chopped bacon over the top of the salad, and garnish with additional fresh parsley or basil.
- Serve immediately for the freshest taste.
