Instructions

  1. Begin by preparing your ingredients. Toast 2 slices of your preferred bread until golden brown and crispy.
  2. In a small bowl, mash 1 ripe avocado with a fork until smooth. You can add a pinch of salt and pepper to enhance the flavor if desired.
  3. In a skillet, heat 1 tablespoon of butter over medium heat. Once the butter is melted and bubbling, crack in 2 large eggs. Cook them sunny-side up until the whites are set but the yolks are still runny, about 2-3 minutes.
  4. While the eggs are cooking, prepare the bacon. In another skillet, cook 3 strips of bacon over medium heat until crispy. Remove the bacon and let it drain on paper towels.
  5. Once the eggs are done, season them with a sprinkle of salt and pepper.
  6. Assemble your sandwich: spread the mashed avocado evenly on one slice of toasted bread. Layer the crispy bacon strips on top of the avocado.
