Delicious Egg and Avocado Sandwich with Bacon

Ingredients
- 2 slices of your preferred bread, toasted
- 1 ripe avocado, mashed
- 1 tablespoon of butter for frying the eggs
- 2 large eggs, cooked sunny-side up
- salt for seasoning
- pepper for seasoning
- red pepper flakes for garnish
- 3 strips of crispy bacon
Instructions
- Begin by preparing your ingredients. Toast 2 slices of your preferred bread until golden brown and crispy.
- In a small bowl, mash 1 ripe avocado with a fork until smooth. You can add a pinch of salt and pepper to enhance the flavor if desired.
- In a skillet, heat 1 tablespoon of butter over medium heat. Once the butter is melted and bubbling, crack in 2 large eggs. Cook them sunny-side up until the whites are set but the yolks are still runny, about 2-3 minutes.
- While the eggs are cooking, prepare the bacon. In another skillet, cook 3 strips of bacon over medium heat until crispy. Remove the bacon and let it drain on paper towels.
- Once the eggs are done, season them with a sprinkle of salt and pepper.
- Assemble your sandwich: spread the mashed avocado evenly on one slice of toasted bread. Layer the crispy bacon strips on top of the avocado.
- Gently place the sunny-side up eggs on top of the bacon. Sprinkle a pinch of red pepper flakes for a touch of heat and garnish.
- Top with the second slice of toasted bread, pressing down gently to hold everything together.
- Cut the sandwich in half and serve immediately, enjoying the delicious combination of creamy avocado, savory bacon, and perfectly cooked eggs.
