Instructions

  1. Gather all ingredients: 2 cups of oil, 2 tablespoons of extra-virgin olive oil, 1 tablespoon of lemon-pepper seasoning, and 12 chicken wings.
  2. In a deep-fryer or a large saucepan, heat the oil to 375 degrees F (190 degrees C).
  3. While the oil is heating, combine the 2 tablespoons of extra-virgin olive oil and 1 tablespoon of lemon-pepper seasoning in a bowl. Stir well to mix and set aside.
  4. Once the oil has reached the desired temperature, carefully add the chicken wings to the hot oil.
  5. Fry the wings for about 8 minutes, or until they are golden brown and no longer pink at the bone. You can check for doneness by inserting an instant-read thermometer into the thickest part of the wing; it should read 165 degrees F (74 degrees C).
  6. Using a slotted spoon or tongs, carefully remove the wings from the hot oil and place them on a paper towel-lined plate to drain excess oil.
  7. While the wings are still hot, transfer them to the bowl with the lemon-pepper mixture.
  8. Toss the wings in the mixture until they are evenly coated with the seasoning.
