  • 2 slices of your preferred bread, toasted
  • 1 ripe avocado, mashed
  • 1 tablespoon of butter for frying the eggs
  • 2 large eggs, cooked sunny-side up
  • salt for seasoning
  • pepper for seasoning
  • red pepper flakes for garnish

Instructions

  1. Start by toasting two slices of your preferred bread until they are golden brown.
  2. In a small bowl, mash 1 ripe avocado with a fork and add salt and pepper to taste, mixing until smooth and creamy.
  3. In a small skillet over medium heat, add 1 tablespoon of butter. Once melted, crack 2 large eggs into the skillet and cook until the whites are firm but the yolks remain runny, about 3-4 minutes for sunny-side up eggs.
  4. Once the bread is toasted, spread the mashed avocado evenly over each slice.
  5. Using a spatula, carefully place each cooked egg on top of the avocado spread on one slice of bread.
  6. Top the eggs with a sprinkle of red pepper flakes and additional salt if desired.
  7. Place the second slice of bread on top to complete the sandwich.
  8. Cut the sandwich in half and serve immediately.
