Egg and Avocado Sandwich
Ingredients
- 2 slices of your preferred bread, toasted
- 1 ripe avocado, mashed
- 1 tablespoon of butter for frying the eggs
- 2 large eggs, cooked sunny-side up
- salt for seasoning
- pepper for seasoning
- red pepper flakes for garnish
Instructions
- Start by toasting two slices of your preferred bread until they are golden brown.
- In a small bowl, mash 1 ripe avocado with a fork and add salt and pepper to taste, mixing until smooth and creamy.
- In a small skillet over medium heat, add 1 tablespoon of butter. Once melted, crack 2 large eggs into the skillet and cook until the whites are firm but the yolks remain runny, about 3-4 minutes for sunny-side up eggs.
- Once the bread is toasted, spread the mashed avocado evenly over each slice.
- Using a spatula, carefully place each cooked egg on top of the avocado spread on one slice of bread.
- Top the eggs with a sprinkle of red pepper flakes and additional salt if desired.
- Place the second slice of bread on top to complete the sandwich.
- Cut the sandwich in half and serve immediately.
