  • 4 bone-in chicken thighs
  • 1/2 cup unsalted butter
  • 6 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels, then season both sides with salt, black pepper, and smoked paprika.
  3. In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down.
  4. Sear the chicken thighs for about 5-7 minutes until the skin is golden brown and crispy. Flip the thighs and sear the other side for an additional 5 minutes.
  5. Reduce the heat to medium-low. Add the minced garlic and butter to the skillet, spooning the melted butter over the chicken thighs.
  6. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
  7. Remove the skillet from the oven and sprinkle with fresh chopped parsley before serving.
  8. Serve the chicken thighs with the garlic butter sauce drizzled on top.
