Garlic Sauteed Spinach with Lemon Zest

Ingredients
- fresh spinach, 10 ounces
- garlic, 3 cloves (minced)
- olive oil, 2 tablespoons
- fresh lemon juice, 1 tablespoon
- lemon zest, 1 teaspoon
- salt, to taste
- black pepper, to taste
Instructions
- Wash the fresh spinach under cold water to remove any dirt and sediment. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic to the skillet and sauté for about 30 seconds, or until fragrant, being careful not to burn it.
- Add the spinach to the skillet, stirring to coat it with olive oil and garlic.
- Cook the spinach for about 2-3 minutes, until it is wilted and tender.
- Remove from heat and stir in the fresh lemon juice and lemon zest.
- Season with salt and black pepper to taste.
- Serve immediately while warm as a delicious side dish.
