  • fresh spinach, 10 ounces

  • lemon zest, 1 teaspoon

Instructions

  1. Wash the fresh spinach under cold water to remove any dirt and sediment. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 30 seconds, or until fragrant, being careful not to burn it.
  4. Add the spinach to the skillet, stirring to coat it with olive oil and garlic.
  5. Cook the spinach for about 2-3 minutes, until it is wilted and tender.
  6. Remove from heat and stir in the fresh lemon juice and lemon zest.
  7. Season with salt and black pepper to taste.
  8. Serve immediately while warm as a delicious side dish.
