Ingredients

  • 2 ribeye steaks (about 1 pound total)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 6 cups mixed salad greens
  • 1 ripe avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, honey, minced garlic, salt, and black pepper to create the vinaigrette.
  3. Brush the ribeye steaks with 1 tablespoon of olive oil and season with salt and pepper.
  4. Grill the steaks for about 4-5 minutes on each side for medium-rare, or until your desired doneness is achieved.
  5. Remove the steaks from the grill and let them rest for 5 minutes before slicing.
  6. In a large bowl, combine the mixed greens, cherry tomatoes, avocado slices, red onion, and chopped cilantro.
  7. Slice the grilled steak thinly against the grain and add it to the salad.
  8. Drizzle the citrus vinaigrette over the salad and toss gently to combine.
  9. Serve immediately and enjoy your refreshing grilled steak salad!
