Hearty Meat and Herb Stuffed Manicotti

Ingredients
- 12 manicotti tubes
- 1 pound Italian sausage, casings removed
- 1 pound ground beef
- 15 ounces ricotta cheese
- 2 cups shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
- 3 cups marinara sauce, divided
- 1/4 cup fresh parsley, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the Italian sausage and ground beef until browned, breaking it apart with a spoon. Drain excess fat.
- Add minced garlic, Italian seasoning, salt, and black pepper to the meat mixture. Stir in chopped parsley and cook for an additional 2 minutes until fragrant.
- In a large bowl, mix the cooked beef and sausage with ricotta cheese, 1 cup of mozzarella cheese, and 1/4 cup of Parmesan cheese until well combined.
- Spread 1 cup of marinara sauce evenly across the bottom of a 9x13 inch baking dish.
- Stuff each manicotti tube with the meat and cheese mixture and place them in the baking dish.
- Top the stuffed manicotti with the remaining marinara sauce and sprinkle the remaining mozzarella and Parmesan cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
- Let the dish cool for a few minutes before serving. Garnish with additional parsley if desired.
