  • 1 pound ground turkey

  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup water or chicken broth
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Sour cream or Greek yogurt for serving
  • Shredded cheese for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, sauté for about 5 minutes until softened.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the ground turkey to the pot, breaking it apart with a spoon, and cook until browned, about 7-10 minutes.
  4. Stir in the chili powder, ground cumin, salt, and black pepper. Cook for 1-2 minutes to toast the spices.
  5. Add the diced tomatoes, kidney beans, black beans, and water or broth to the pot. Stir well to combine.
  6. Bring the chili to a simmer, then reduce the heat to low and cover. Let it cook for about 30 minutes, stirring occasionally.
  7. Taste and adjust seasoning if needed. If you prefer a thicker chili, let it simmer uncovered for an additional 10-15 minutes.
  8. Serve hot, garnished with fresh cilantro, a dollop of sour cream or Greek yogurt, and shredded cheese, if desired.
