Hearty Turkey Chili with Beans

Ingredients
- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 medium bell pepper, diced
- 2 cans (14.5 ounces each) diced tomatoes
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup water or chicken broth
- 1/4 cup fresh cilantro, chopped (for garnish)
- Sour cream or Greek yogurt for serving
- Shredded cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground turkey to the pot, breaking it apart with a spoon, and cook until browned, about 7-10 minutes.
- Stir in the chili powder, ground cumin, salt, and black pepper. Cook for 1-2 minutes to toast the spices.
- Add the diced tomatoes, kidney beans, black beans, and water or broth to the pot. Stir well to combine.
- Bring the chili to a simmer, then reduce the heat to low and cover. Let it cook for about 30 minutes, stirring occasionally.
- Taste and adjust seasoning if needed. If you prefer a thicker chili, let it simmer uncovered for an additional 10-15 minutes.
- Serve hot, garnished with fresh cilantro, a dollop of sour cream or Greek yogurt, and shredded cheese, if desired.
