  • 1 pound ground turkey

  • 1 cup frozen corn
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the diced onion and red bell pepper, cooking until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground turkey to the pot, breaking it up with a wooden spoon, and cook until browned, about 8-10 minutes.
  5. Stir in the diced tomatoes, black beans, frozen corn, chili powder, cumin, salt, and black pepper until combined.
  6. Bring the chili to a simmer, reduce the heat to low, and cover the pot. Let it cook for 20-25 minutes, stirring occasionally.
  7. Taste and adjust seasoning if necessary. If you prefer a spicier chili, feel free to add a pinch of cayenne pepper.
  8. Serve hot, garnished with fresh cilantro if desired.
