Hearty Turkey Chili with Black Beans and Corn

Ingredients
- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup frozen corn
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh cilantro for garnish (optional)
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the diced onion and red bell pepper, cooking until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground turkey to the pot, breaking it up with a wooden spoon, and cook until browned, about 8-10 minutes.
- Stir in the diced tomatoes, black beans, frozen corn, chili powder, cumin, salt, and black pepper until combined.
- Bring the chili to a simmer, reduce the heat to low, and cover the pot. Let it cook for 20-25 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. If you prefer a spicier chili, feel free to add a pinch of cayenne pepper.
- Serve hot, garnished with fresh cilantro if desired.
