  • 4 bone-in chicken thighs
  • 4 cloves of garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons olive oil

  • 1/2 teaspoon black pepper
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, black pepper, and lemon juice to create a marinade.
  3. Pat the chicken thighs dry with paper towels. This ensures crispy skin once baked.
  4. Place the chicken thighs in a large bowl or a resealable plastic bag and pour the marinade over them. Make sure each thigh is well coated. Allow to marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
  5. Arrange the marinated chicken thighs skin-side up on a baking sheet lined with parchment paper or in a greased baking dish.
  6. Bake in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden brown.
  7. Remove from the oven and let the chicken rest for 5 minutes before serving.
