Herb-Infused Baked Chicken Thighs with Garlic

Ingredients
- 4 bone-in chicken thighs
- 4 cloves of garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Juice of 1 lemon
Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, combine the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, black pepper, and lemon juice to create a marinade.
- Pat the chicken thighs dry with paper towels. This ensures crispy skin once baked.
- Place the chicken thighs in a large bowl or a resealable plastic bag and pour the marinade over them. Make sure each thigh is well coated. Allow to marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
- Arrange the marinated chicken thighs skin-side up on a baking sheet lined with parchment paper or in a greased baking dish.
- Bake in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden brown.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
