Honey Butter Chicken Biscuit Delight

Ingredients
- 2 chicken breasts, boneless and skinless
- 1 cup all-purpose flour
- 1 cup buttermilk
- 1/2 cup honey
- 1/4 cup unsalted butter, softened
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 egg, beaten
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the flour, baking powder, salt, and black pepper.
- Add the buttermilk and beaten egg to the dry ingredients. Mix until just combined to form a dough.
- On a floured surface, gently knead the dough a few times until smooth. Roll out to about 1 inch thick and cut into rounds using a biscuit cutter.
- Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown.
- While the biscuits are baking, prepare the chicken. Cut the chicken breasts into strips and season with salt, black pepper, and cayenne pepper if using.
- In a large skillet over medium heat, melt a tablespoon of butter. Add the chicken strips and cook until golden brown and cooked through, about 5-7 minutes per side.
- In a small saucepan, combine the softened butter and honey over low heat. Stir until melted and well combined.
- Once the chicken is cooked, remove it from the heat and drizzle with the honey butter mixture.
- To serve, split open a biscuit, add a generous piece of honey butter chicken, and drizzle more honey butter on top. Enjoy!
