  • 2 chicken breasts, boneless and skinless

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the flour, baking powder, salt, and black pepper.
  3. Add the buttermilk and beaten egg to the dry ingredients. Mix until just combined to form a dough.
  4. On a floured surface, gently knead the dough a few times until smooth. Roll out to about 1 inch thick and cut into rounds using a biscuit cutter.
  5. Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown.
  6. While the biscuits are baking, prepare the chicken. Cut the chicken breasts into strips and season with salt, black pepper, and cayenne pepper if using.
  7. In a large skillet over medium heat, melt a tablespoon of butter. Add the chicken strips and cook until golden brown and cooked through, about 5-7 minutes per side.
  8. In a small saucepan, combine the softened butter and honey over low heat. Stir until melted and well combined.
  9. Once the chicken is cooked, remove it from the heat and drizzle with the honey butter mixture.
  10. To serve, split open a biscuit, add a generous piece of honey butter chicken, and drizzle more honey butter on top. Enjoy!
