  • 1 pound of ground chicken
  • 1/2 cup of breadcrumbs
  • 1 large egg
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/3 cup of honey
  • 1/4 cup of hot sauce
  • 1 cup of white rice
  • 2 cups of water for cooking rice
  • For garnish (optional)

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, egg, garlic powder, salt, and black pepper. Mix until well combined.
  2. Preheat the oven to 400°F (200°C).
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a lined baking sheet.
  4. Bake the meatballs in the preheated oven for 15-20 minutes, or until cooked through and golden brown.
  5. While the meatballs are baking, prepare the white rice. In a saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice, reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.
  6. In a small saucepan, combine honey and hot sauce over medium heat. Stir until heated through and slightly thickened.
  7. Once the meatballs are cooked, remove them from the oven and toss them in the honey hot sauce mixture to coat evenly.
  8. Serve the glazed meatballs over a bed of fluffy white rice and garnish with chopped green onions if desired.
