Sweet & Hot Chicken Meatballs (Maili's Meatballs)

Ingredients
- 1 pound of ground chicken
- 1/2 cup of breadcrumbs
- 1 large egg
- 1 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/3 cup of honey
- 1/4 cup of hot sauce
- 1 cup of white rice
- 2 cups of water for cooking rice
- For garnish (optional)
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, egg, garlic powder, salt, and black pepper. Mix until well combined.
- Preheat the oven to 400°F (200°C).
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a lined baking sheet.
- Bake the meatballs in the preheated oven for 15-20 minutes, or until cooked through and golden brown.
- While the meatballs are baking, prepare the white rice. In a saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice, reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.
- In a small saucepan, combine honey and hot sauce over medium heat. Stir until heated through and slightly thickened.
- Once the meatballs are cooked, remove them from the oven and toss them in the honey hot sauce mixture to coat evenly.
- Serve the glazed meatballs over a bed of fluffy white rice and garnish with chopped green onions if desired.
