  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons honey
  • 3 tablespoons soy sauce
  • 2 cups cooked white rice
  • 1 cup pineapple chunks, fresh or canned
  • 3 green onions, chopped
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Instructions

  1. In a small bowl, mix together honey and soy sauce until well combined. Set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.
  3. Add the peeled and deveined shrimp to the pan and cook for 3-4 minutes, stirring frequently, until they turn pink and are cooked through.
  4. Stir in the pineapple chunks and cook for an additional 2 minutes until heated through.
  5. Pour the honey-soy sauce mixture over the shrimp and pineapple, stirring well to coat. Cook for another 2 minutes to allow the sauce to thicken slightly.
  6. Remove from heat and stir in the chopped green onions.
  7. Serve immediately over a bed of fluffy cooked rice.
