Honey Soy Shrimp Stir-Fry with Pineapple and Rice
Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons honey
- 3 tablespoons soy sauce
- 2 cups cooked white rice
- 1 cup pineapple chunks, fresh or canned
- 3 green onions, chopped
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
Instructions
- In a small bowl, mix together honey and soy sauce until well combined. Set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant.
- Add the peeled and deveined shrimp to the pan and cook for 3-4 minutes, stirring frequently, until they turn pink and are cooked through.
- Stir in the pineapple chunks and cook for an additional 2 minutes until heated through.
- Pour the honey-soy sauce mixture over the shrimp and pineapple, stirring well to coat. Cook for another 2 minutes to allow the sauce to thicken slightly.
- Remove from heat and stir in the chopped green onions.
- Serve immediately over a bed of fluffy cooked rice.
