Italian Zucchini Beef Bake

Ingredients
- 1 pound (450 g) ground beef
- 2 medium zucchinis, sliced
- 1 cup (100 g) shredded mozzarella cheese
- 2 cups (300 g) diced tomatoes (fresh or canned)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet. Cook until browned and no longer pink, breaking it up with a spoon, about 5-7 minutes.
- Stir in the diced tomatoes, Italian seasoning, salt, and black pepper. Let it simmer for about 5 minutes to allow the flavors to meld.
- In a greased 9x13 inch baking dish, layer half of the sliced zucchini on the bottom. Spread half of the beef-tomato mixture over the zucchini.
- Add another layer of the remaining zucchini slices, followed by the rest of the beef-tomato mixture.
- Top with shredded mozzarella cheese evenly over the entire dish.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
