Ingredients

  • 1 pound (450 g) ground beef
  • 2 medium zucchinis, sliced
  • 1 cup (100 g) shredded mozzarella cheese
  • 2 cups (300 g) diced tomatoes (fresh or canned)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet. Cook until browned and no longer pink, breaking it up with a spoon, about 5-7 minutes.
  4. Stir in the diced tomatoes, Italian seasoning, salt, and black pepper. Let it simmer for about 5 minutes to allow the flavors to meld.
  5. In a greased 9x13 inch baking dish, layer half of the sliced zucchini on the bottom. Spread half of the beef-tomato mixture over the zucchini.
  6. Add another layer of the remaining zucchini slices, followed by the rest of the beef-tomato mixture.
  7. Top with shredded mozzarella cheese evenly over the entire dish.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
