Lemon Garlic Shrimp with Asparagus

Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- Juice of 1 large lemon
- Zest of 1 large lemon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds, until fragrant.
- Add the asparagus to the skillet and season with salt and pepper. Cook for 3-4 minutes, stirring occasionally, until the asparagus is bright green and tender-crisp.
- Add the shrimp to the skillet and cook for 2-3 minutes, stirring occasionally, until the shrimp turn pink and opaque.
- Pour in the lemon juice and add the lemon zest. Stir well to combine and cook for an additional 1-2 minutes.
- Remove from heat and sprinkle with fresh parsley before serving.
