  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Juice of 1 large lemon
  • Zest of 1 large lemon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds, until fragrant.
  3. Add the asparagus to the skillet and season with salt and pepper. Cook for 3-4 minutes, stirring occasionally, until the asparagus is bright green and tender-crisp.
  4. Add the shrimp to the skillet and cook for 2-3 minutes, stirring occasionally, until the shrimp turn pink and opaque.
  5. Pour in the lemon juice and add the lemon zest. Stir well to combine and cook for an additional 1-2 minutes.
  6. Remove from heat and sprinkle with fresh parsley before serving.
