Ingredients

  • 4 bone-in chicken thighs
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.
  3. Place the chicken pieces in the bowl and make sure they are well coated with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.
  4. Once marinated, transfer the chicken pieces to a baking dish, pouring excess marinade over the top.
  5. Sprinkle fresh chopped parsley over the chicken for added flavor.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C).
  7. Remove the baking dish from the oven and let the chicken rest for 5 minutes before serving.
  8. Serve warm with a side of roasted vegetables or a fresh salad.
