Lemon Herb Chicken

Ingredients
- 4 bone-in chicken thighs
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.
- Place the chicken pieces in the bowl and make sure they are well coated with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.
- Once marinated, transfer the chicken pieces to a baking dish, pouring excess marinade over the top.
- Sprinkle fresh chopped parsley over the chicken for added flavor.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C).
- Remove the baking dish from the oven and let the chicken rest for 5 minutes before serving.
- Serve warm with a side of roasted vegetables or a fresh salad.
