Lemon Herb Grilled Chicken

Ingredients
- 1/4 cup of olive oil
- 1/4 cup of fresh lemon juice
- 3 cloves of garlic, minced
- 2 tablespoons of fresh parsley, chopped
- 1 tablespoon of fresh thyme, chopped
- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 lemon, cut into wedges for serving
Instructions
- In a large bowl, combine the olive oil, lemon juice, minced garlic, chopped fresh herbs, salt, and pepper to create the marinade.
- Add the chicken breasts to the bowl and ensure they are well coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
- Preheat your grill to medium-high heat. Once hot, lightly oil the grill grates to prevent sticking.
- Remove the chicken from the marinade and discard the leftover marinade. Place the chicken on the grill.
- Grill the chicken for about 6-8 minutes on each side, or until the internal temperature reaches 165°F and the chicken is no longer pink in the center.
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Serve the Lemon Herb Grilled Chicken with fresh lemon wedges and your choice of sides.
