Ingredients

  • 1/4 cup of olive oil
  • 1/4 cup of fresh lemon juice
  • 3 cloves of garlic, minced
  • 2 tablespoons of fresh parsley, chopped
  • 1 tablespoon of fresh thyme, chopped
  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 lemon, cut into wedges for serving

Instructions

  1. In a large bowl, combine the olive oil, lemon juice, minced garlic, chopped fresh herbs, salt, and pepper to create the marinade.
  2. Add the chicken breasts to the bowl and ensure they are well coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
  3. Preheat your grill to medium-high heat. Once hot, lightly oil the grill grates to prevent sticking.
  4. Remove the chicken from the marinade and discard the leftover marinade. Place the chicken on the grill.
  5. Grill the chicken for about 6-8 minutes on each side, or until the internal temperature reaches 165°F and the chicken is no longer pink in the center.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
  7. Serve the Lemon Herb Grilled Chicken with fresh lemon wedges and your choice of sides.
