Ingredients
- 2 tablespoons Butter
- to taste Spices (your choice of spices)
- 2 cloves Garlic (fresh, minced)
- 1/2 cup Sun-dried tomatoes (chopped)
- 2 cans Chickpeas (rinsed)
- 1 cup Coconut cream (or heavy cream)
- 2 tablespoons Pesto rosso (or tomato paste)
- 1/4 cup Basil (fresh, chopped)
Instructions
- Melt butter in a saucepan over medium heat and add your choice of spices.
- Add minced garlic and chopped sun-dried tomatoes, sauté until fragrant.
- Add rinsed chickpeas and coconut cream (or heavy cream) to the saucepan.
- Stir in pesto rosso or tomato paste until well combined.
- Top with fresh basil before serving.
