Mediterranean Baked Romano Cheese with Olives, Tomatoes, and Plums

Ingredients
- 8 ounces of Romano cheese, grated
- 1 cup of pitted Kalamata olives, halved
- 1 cup of cherry tomatoes, halved
- 3 cloves of garlic, minced
- 2 ripe plums, diced
- 2 tablespoons of olive oil
- 1/4 cup of fresh basil, chopped
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the halved Kalamata olives, halved cherry tomatoes, diced plums, minced garlic, olive oil, chopped fresh basil, salt, and black pepper. Toss everything together until well coated.
- In a baking dish, spread the mixture evenly across the bottom.
- Sprinkle the grated Romano cheese generously over the top of the vegetable and fruit mixture.
- Bake in the preheated oven for 25 minutes, or until the cheese is melted and bubbly, and the vegetables are tender.
- Remove from the oven and let cool slightly before serving. Garnish with additional fresh basil if desired.
