Ingredients

  • 8 ounces of Romano cheese, grated
  • 1 cup of pitted Kalamata olives, halved
  • 1 cup of cherry tomatoes, halved
  • 3 cloves of garlic, minced
  • 2 ripe plums, diced
  • 2 tablespoons of olive oil
  • 1/4 cup of fresh basil, chopped
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the halved Kalamata olives, halved cherry tomatoes, diced plums, minced garlic, olive oil, chopped fresh basil, salt, and black pepper. Toss everything together until well coated.
  3. In a baking dish, spread the mixture evenly across the bottom.
  4. Sprinkle the grated Romano cheese generously over the top of the vegetable and fruit mixture.
  5. Bake in the preheated oven for 25 minutes, or until the cheese is melted and bubbly, and the vegetables are tender.
  6. Remove from the oven and let cool slightly before serving. Garnish with additional fresh basil if desired.
