  • 2 chicken breasts, boneless and skinless
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup black olives, sliced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix together 2 tablespoons of olive oil, lemon juice, dried oregano, salt, and black pepper to create the marinade.
  3. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 15 minutes.
  4. Once marinated, remove the chicken from the bag and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until cooked through and no longer pink in the middle. Remove from the grill and let rest for a few minutes.
  5. While the chicken is resting, in a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, diced cucumber, crumbled feta cheese, and sliced black olives.
  6. Slice the grilled chicken into strips and place it on top of the salad.
  7. Drizzle the remaining olive oil over the salad and toss gently to combine. Serve immediately.
