Mediterranean Grilled Chicken Salad

Ingredients
- 2 chicken breasts, boneless and skinless
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup black olives, sliced
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 2 tablespoons of olive oil, lemon juice, dried oregano, salt, and black pepper to create the marinade.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 15 minutes.
- Once marinated, remove the chicken from the bag and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until cooked through and no longer pink in the middle. Remove from the grill and let rest for a few minutes.
- While the chicken is resting, in a large bowl, combine the chopped romaine lettuce, halved cherry tomatoes, diced cucumber, crumbled feta cheese, and sliced black olives.
- Slice the grilled chicken into strips and place it on top of the salad.
- Drizzle the remaining olive oil over the salad and toss gently to combine. Serve immediately.
