Mediterranean Sunrise Toast

Ingredients
- 2 slices of whole grain bread
- 1 ripe avocado, mashed
- 1 tablespoon of fresh lemon juice
- salt to taste
- black pepper to taste
- 1 cup of cherry tomatoes, halved
- 1/4 cup of crumbled feta cheese
- 1/4 cup of fresh herbs (basil or parsley), chopped
- 2 tablespoons of extra virgin olive oil for drizzling
- red pepper flakes for garnish
Instructions
- Begin by toasting the slices of whole grain bread in a toaster or under a broiler until golden brown and crispy.
- While the bread is toasting, prepare the avocado. Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash the avocado with a fork and mix in the lemon juice, salt, and pepper.
- Next, slice the cherry tomatoes in half and set them aside.
- Once the bread is toasted, spread a generous layer of the mashed avocado onto each slice.
- Top the avocado toast with the halved cherry tomatoes, crumbled feta cheese, and fresh herbs (such as basil or parsley).
- Drizzle a little extra virgin olive oil over each toast for added flavor.
- Lastly, sprinkle with red pepper flakes for a touch of heat, if desired. Serve immediately and enjoy your Mediterranean Sunrise Toast.
