Ingredients

  • 1 teaspoon smoked paprika

Instructions

  1. 1. Preheat your grill or skillet over medium-high heat.
  2. 2. In a small bowl, mix together the lime juice, lemon juice, Caribbean spice blend, olive oil, salt, black pepper, garlic powder, and smoked paprika to create a marinade.
  3. 3. Place the salmon fillets in a shallow dish and pour half of the marinade over them, ensuring each fillet is well-coated. Let it marinate for about 10 minutes.
  4. 4. In another bowl, toss the sliced bell peppers, zucchini, and red onion with the remaining marinade until well coated.
  5. 5. Once the grill or skillet is hot, place the salmon fillets skin-side down on the grill or skillet.
  6. 6. Cook the salmon for about 4-5 minutes, then carefully flip the fillets and cook for an additional 4-5 minutes, or until the salmon flakes easily with a fork and is cooked through.
  7. 7. While the salmon is cooking, add the vegetables to the grill or skillet and cook for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.
  8. 8. Remove the salmon and vegetables from the heat, and sprinkle the salmon with chopped cilantro.
