Modified Caribbean Spiced Salmon with Citrus Zest and Grilled Vegetables

Ingredients
- 4 salmon fillets (6 oz each)
- 2 tablespoons fresh lime juice
- 2 tablespoons fresh lemon juice
- 2 teaspoons Caribbean spice blend
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped
- Lime wedges for serving
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 small red onion, sliced
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Instructions
- 1. Preheat your grill or skillet over medium-high heat.
- 2. In a small bowl, mix together the lime juice, lemon juice, Caribbean spice blend, olive oil, salt, black pepper, garlic powder, and smoked paprika to create a marinade.
- 3. Place the salmon fillets in a shallow dish and pour half of the marinade over them, ensuring each fillet is well-coated. Let it marinate for about 10 minutes.
- 4. In another bowl, toss the sliced bell peppers, zucchini, and red onion with the remaining marinade until well coated.
- 5. Once the grill or skillet is hot, place the salmon fillets skin-side down on the grill or skillet.
- 6. Cook the salmon for about 4-5 minutes, then carefully flip the fillets and cook for an additional 4-5 minutes, or until the salmon flakes easily with a fork and is cooked through.
- 7. While the salmon is cooking, add the vegetables to the grill or skillet and cook for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.
- 8. Remove the salmon and vegetables from the heat, and sprinkle the salmon with chopped cilantro.
- 9. Serve the salmon and grilled vegetables immediately with lime wedges on the side for an extra burst of citrus.
