Oprah Winfrey’s Popular Scrambled Eggs with a Spicy Twist

Ingredients
- Three large eggs
- Minced green jalapeños
- Chopped scallions
- Truffle cheese, plus more for serving
- Shavings of fresh truffle for garnish (optional)
- Minced habanero chilis for extra heat
Instructions
- Crack the three large eggs into a mixing bowl. Use a whisk to beat them until fully combined, ensuring the yolks and whites are well blended.
- Add the minced green jalapeños and chopped scallions to the eggs. Mix well to distribute the ingredients evenly throughout the egg mixture.
- In a non-stick skillet, heat a tablespoon of butter over medium heat until it is melted and bubbling. Make sure the butter coats the bottom of the skillet.
- Pour the egg mixture into the skillet. Allow it to sit undisturbed for about 30 seconds to a minute, letting the bottom begin to set.
- Using a spatula, gently stir the eggs, pushing them from the edges toward the center. Repeat this process until the eggs are mostly cooked but still slightly runny.
- Add the truffle cheese to the eggs and fold it in gently. Continue to cook until the eggs are just set and the cheese is melted, about 1-2 more minutes.
- Remove the skillet from heat. If desired, shave fresh truffle over the top for garnish.
- Serve immediately, optionally with additional truffle cheese on top for extra flavor. Enjoy your spicy scrambled eggs!
