Ingredients

  • 1 package Boursin cheese (Place in the middle of the dish)
  • 1 cup Orzo
  • 1/2 cup Sun-dried tomatoes (Jarred in oil)
  • 2 cloves Garlic cloves (Minced)
  • 1/2 teaspoon Chili flakes
  • 1 teaspoon Basil (Dried)
  • 1 teaspoon Oregano (Dried)
  • to taste Salt
  • to taste Black pepper
  • 2 cups Vegetable stock
  • as needed Oil from sun-dried tomatoes jar (Optional)
  • 1 cup Smoked white cheddar cheese (Shredded, or any cheese available)
  • 2 cups Spinach (Fresh)

Instructions

  1. Place the boursin cheese in the middle of a baking dish.
  2. Add orzo, sun-dried tomatoes, minced garlic, chili flakes, basil, oregano, salt, and pepper to the dish.
  3. Pour vegetable stock over the ingredients and add some oil from the sun-dried tomatoes jar if desired.
  4. Bake in the oven, checking and stirring after 10 minutes.
  5. Shred the smoked white cheddar cheese while the dish is baking.
  6. When the orzo is 90% done, mix in the shredded cheese and spinach.
  7. Bake for another 2-3 minutes until the spinach is wilted and the cheese is melted.
