Ingredients
- 1 package Boursin cheese (Place in the middle of the dish)
- 1 cup Orzo
- 1/2 cup Sun-dried tomatoes (Jarred in oil)
- 2 cloves Garlic cloves (Minced)
- 1/2 teaspoon Chili flakes
- 1 teaspoon Basil (Dried)
- 1 teaspoon Oregano (Dried)
- to taste Salt
- to taste Black pepper
- 2 cups Vegetable stock
- as needed Oil from sun-dried tomatoes jar (Optional)
- 1 cup Smoked white cheddar cheese (Shredded, or any cheese available)
- 2 cups Spinach (Fresh)
Instructions
- Place the boursin cheese in the middle of a baking dish.
- Add orzo, sun-dried tomatoes, minced garlic, chili flakes, basil, oregano, salt, and pepper to the dish.
- Pour vegetable stock over the ingredients and add some oil from the sun-dried tomatoes jar if desired.
- Bake in the oven, checking and stirring after 10 minutes.
- Shred the smoked white cheddar cheese while the dish is baking.
- When the orzo is 90% done, mix in the shredded cheese and spinach.
- Bake for another 2-3 minutes until the spinach is wilted and the cheese is melted.
